You can't beet the benefits of this delicious pasta. Amazing in taste and color. Beets support heart health, are anti-inflammatory, detox the blood, contain anti aging properties and boosts stamina and muscle recovery.
3 tbsp poppy seeds
6 tbsp butter
1 1/2 lbs beets (about 4 good sized beets), peeled and finely grated (this is a messy process but worth it)
1 lb whole wheat penne or fettucine
2/3 cup grated parmigiano-reggiano
1 tsp balsamic vinegar
1/4 cup scallions, thinly sliced
Toast poppy seeds in a large sauce pan until slightly nutty, about 2 minutes. Set aside in a small bowl. Add 5 tablespoons butter to the pan and cook over moderate heat until it starts to brown, about 5 minutes. Stir in the beets and season with salt and pepper. Reduce to low and cook beets until they are tender, about 10 minutes.
Meanwhile, cook pasta to al dente. Drain and transfer to a large serving bowl. Toss with 1 tablespoon butter and grated cheese. Season with salt and pepper, stir in beets and sprinkle with poppy seeds. Add balsamic, scallions and toss together. Bon Appetite!
