Overly Easy Egg Breakfast

I love this simple breakfast. It's easy, nourishing and delicious. My favorite ingredient here is cilantro. This herb can always be found in my fridge.  Cilantro lowers anxiety and improves sleep, settles digestive upset, and helps to rid the body of heavy metals.

 

Ingredients:

2 small whole wheat/corn tortillas

2 organic eggs

1/2 avocado

4 cherry tomatoes, halved

Cilantro (as much as you wish)

Everything but the Bagel Sesame Seasoning Blend (from Trader Joe's)

1 tbsp olive oil

 

Directions:

1. Lightly toast tortillas.

2. Heat olive oil in a small skillet and add eggs. Cook eggs to your liking, over easy is my favorite. Once cooked, plate pita, top with eggs and sprinkle with EBTBSSB. 

3. Scoop the avocado and create a sundae and top with tomatoes and cilantro.
